Hello foodies, I am back with a new recipe for you all and it’s a Mix vegetable paratha. The mix veg. paratha is soft made with whole wheat, mix vegies, spices. It is a perfect dish for breakfast, lunch or dinner. I specially used to eat parathas in morning on every weekend. It tastes soft and delicious. You can make parathas also with paneer and different vegies like potato, Onion, Radish, Carrots etc. I love mix vegetable paratha because this taste delicious and also nutritious. I still remember when I was kid, my mother used to keep parathas in my school tiffin which I used to eat with my school friends. Today I will guide you step by step recipe:
How to make mix vegetable pratha
Step 1. Preparation of Dough
First you need a Large bowl, and then put the whole wheat flour and salt. Add oil or ghee according to your choice and mix it well. Gradually add the warm water and knead into a soft and smooth dough. Then cover the dough and let it rest for at least 15 minutes.

Step 2. Preparation of filling
After making dough we are going to prepare filling for dough. Now Heat oil or ghee in a pan over medium heat. So after that add cumin seeds and let them splutter. Now add some ginger and green chilies and then saute for a few seconds. Then add chopped vegetables and now cook for 5-7 minutes, stirring occasionally, until they soften. After vegies cooked add turmeric powder, redchilli powder, cummin powder, ajwain, salt to taste and other spices. Mix it well and cook vegetables for another 2 to 3 minutes. Then swtch off The heat and let the filling cool down. Now mashed all the vegetables for paratha filling and add some chopped coriander or mint leaves in it.

Step 3. Assembling the parathas
It’s time to assemble our vegetable filling with dough. So we need to divide the dough into small balls of equal size. Take a lightly floured surface and roll out each ball into small circles of around 4 inches in diameter.
Place a spoonful of the vegetable filling in the center of each circle. Now carefully gather the edges of the circle and bring them together to seal the filling. After that flatten the stuffed dough ball slightly and roll it out again into a larger circle about 6-7 inches in diameter. Don’t press it too hard on the dough because filling can be come out.

Step 4. Cook the parathas
After preparing all the stuff heat a tawa over medium heat. Place the paratha on a hot tawa. Cook for 2-3 minutes on each side, till golden brown spots appear. Around the edges of the paratha drizzle a little oil or ghee and let it cook for another minute and flipping occasionally, till both sides are crisp and golden brown. Now take off parathas from the tawa and serve with yogurt, pickle, or chutney. “mmm i can feel the smell of hot delicious paratha”. Have your yummy and healthy mixed vegetable parathas!

2.5 cups whole wheat flour
1 Cup of mixed vegetables(cauliflower, beans, peas, potatoes, carrots)
1-2 green chilies (finely chopped)
½ teaspoon ginger garlic paste
1 teaspoon coriander powder
1 teaspoon jeera powder
½ teaspoon red chili powder or black pepper
¼ teaspoon turmeric powder
¼ teaspoon Garam Masala
1 pinch asafoetida (hing) (optional)
1.5 teaspoon salt (as per taste)
1 tablespoon oil or ghee
1 to 2 tablespoon water for kneading(add if required)
oil or ghee for roasting parathas, as required
Directions
- In a large bowl, combine flour, salt, oil, and warm water.
- After that, Knead into a smooth dough, then cover and rest for 15 minutes.
- Add oil in hot pan, add cumin seeds to splutter, then ginger and chilies.
- Now, Saute veggies for 5-7 min and add spices, cook for 2-3 min more.
- Let the filling cool then mash veggies and add herb.
- After that, divide dough into equal balls, roll each into circles.
- Place vegetable filling in center of each circle, seal and roll circle, being gentle to avoid filling spillage.
- Now Heat tawa for cooking paratha with both sides till golden brown spots.
- Drizzle oil around edges, cook till crisp and golden.
- Now serve hot parathas with yogurt, pickle, or chutney.
- Enjoy your healthy mixed vegetable parathas!
