Today i am going to introduced a new recipe of Vegetable Pulao (Veg pulao). This is dish is very easy to make with taste delicious and healthy too. You can make this dish in less than 30 minutes only in one pot. Whenever i want instant food for lunch i make this recipe. This is easily made recipe you all will love this dish.
About Veg Pulao?
Veg Pulao is a combined rice dish in which rice is cooked with a mixture of vegetables, spices, and sometimes nuts. The secret for a well-cooked and delicious pulao is fragrant rice, well-cooked vegetables, and the aroma of the warm spices. Being a versatile dish, you can adjust the vegetables and spices according to your liking.
How to Make Veg pulao
Preparation
First prepare all the ingridients you need for making pulao. You need 1 Cup of Rice and vegies with other ingredients i have given below in recipe card. So let’s start with wash cup of rice properly until rice visible clearly in water. Afterthat soak it and keep aside for 15 to 20 minutes.
Now prepare vegies like i have used cauliflower, carrots, beans, peas and potato. You can also use soya chunks and paneer for extra protein.

Tempering
Heat the pressure cooker on medium flame and add 1 tablespoon ghee or oil. After heating oil or ghee add cumin seeds, cinnamon stick, bay leaf, cloves, and cardamom stick. If you don’t have these spices you can also make it simple with add only cumin seeds. Now sauté spices for 30 seconds until fragrant. Then add sliced onions in it and cook it until golden brown for 5 to 7 minutes. Furthermore add ginger-garlic paste in it and cook it until fragrant.

Cooking
Now Add all the vegies we chopped and add turmeric powder in it. saute it for 2 to 3 minutes until vegetables are slightly tender. Then add soaked and drained rice in pressure cooker and mix it well. Now add salt(as per taste), garam masala and 2 cups of water then stir it well. Then the close pressure cooker and set gas flame on high. Then cook it for 1 or 2 whistles and then set the gas flame on low for 6 to 7 minutes.
Now release the cooker and let it cool and let the pressure release naturally for 10 minutes and then manually open it.

Serving
Serve your tasty, delicious and healthy vegetable pulao and enjoy. Serve it with Dahi(yogurt) or chatni or any curry. 🙂
Veg Pulao Recipe: How to make vegetable pulao

1 cup basmati rice
2 cups water
2 tspn oil or ghee
1 bay leaf (optional)
1-inch cinnamon stick (optional)
2 cloves (optional)
2 cardamom pods (optional)
1 tspn cumin seeds
1 medium onion (sliced)
1 tspn ginger-garlic paste
1 green chili (optional)
½ cup mixed vegetables (couliflower, carrot, beans, peas, potato, capsicum)
½ tspn turmeric powder
½ tspn garam masala
½ tspn salt (as per taste)
Coriander leafs (chopped)
1 tspn roasted cashews (optional)
Directions
- Preparation
Wash 1 cup basmati rice well and soak in water for about 20 minutes.
Chop all the vegetables (carrots, beans, peas, capsicum, potatoes). - Cooking Pulao
Heat 2 tablespoons of oil or ghee in the pan or pressure cooker.
Add a 1 tablespoon of cummin seeds and let it splutter.
Add bay leaf, thumb-sized piece of cinnamon, a few cloves, and cardamom and saute for a few seconds till fragrant.
Add the sliced onions and saute until golden brown.
Add ginger-garlic paste and green chili then saute for about 1 minute until the raw smell disappears.
Add chopped vegetables and saute for 2 more minutes.
Add turmeric powder, garam masala, and salt then mix well.
Drain water from soaked rice. Add rice to the pan and stir gently to coat some spices to the rice.
Add 2 cups water and allow it to boil. - Cooking Process
For cooking in an open pot cover and simmer for low heat for 12-15 minutes till rice is done.
For cooking in a pressure cooker- simmer over medium heat for 1 whistle, then switch off the gas.
For cooking the Instant Pot- cook on rice mode or manual mode for 5 minutes and natural pressure release. - Finishing Steps
Rest for 5 minutes and then fluff the rice.
Finish with chopped coriander and roasted cashews(optional).
