Hello everyone my name is Lalit and welcome! Today, I’m excited to tell you about a delicious dish (Indian Punjabi Samosa). Samosas offer a delightful balance of flavors and textures: crispy outer layer, savory filling with aromatic spices, sweet and tangy chutneys, and an overall satisfying crunch contrasting with the warm and spicy interior.

In once a week I love to cook samosa because it is my one of the favorite dish. In this blog we are teaching or discussing about samosa and its recipe ,history and step by step process so lets begin.
Step by Step guide:
Ingredients For the dough:
- 2 cups all-purpose flour (maida)
- 4 tbsp oil or ghee
- ½ tsp salt
- ½ tsp carom seeds (ajwain) (optional)
- Water, as needed
For Filling:
- 3 large potatoes (boiled, peeled, and mashed)
- ½ cup green peas (boiled)
- one green chili (finely chopped)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- ½ tsp garam masala
- ½ tsp red chili powder
- half tsp turmeric powder
- 1 tbsp chopped coriander leaves
- Salt to taste
- 1 tbsp oil
Prepare the dough:
Frist you take a large bowl to combine the flour with carom seeds and pinch of salt. Now add some drop of oil, mix as well until the mixture resembles breadcrumbs. and now gradually add water, a little at a time and knead to form a firm, smooth dough. and cover dough with a damp cloth for 30 min.

Prepare the filling:
Now we heat oil in a pan over medium heat, and add cumin seeds and crushed coriander seeds and let them sizzle. after sizzle add ginger and green chilies, and saute for a min. Now add the mashed potatoes and green peas as well and mix well. after that add some garam masala, red chili powder, turmeric power and salt and mix all the ingredients. cook the mixture for 3 to 4 minutes. and add fresh coriander leaves, mix and remove form heat. let the filling cool down.

Assemble the samosas:
Now turn is assembling the samosa, Divide the dough into equal portions and shape each portion into a boll. and now roll the each ball until a round shape. cut the rolled shape in a half two semi circles. now take one semi circle and from a cone shape by folding the straight edge over and sealing with water. now add prepared potato filling in the cone. after that seal the open edge by folding and pressing the dough using water.

Fry the samosas:
Now we reached a final step first heat oil in a deep frying pen. wok over medium heat. Once the oil is hot carefully add the samosas in frying pan a few at a time, and fry until they are golden brown and crispy. Once this step done now remove the fried samosas with a slotted spoon and drain an paper towels to remove excess oil.

Now Your homemade samosas are ready to be enjoyed! Serve them with tamarind chutney, mint chutney, or any dip of your choice. Happy cooking!

Ingredients
2 cups all-purpose flour (maida)

For Filling

Direction for Recipe
- Preparation of the Filling:
Heat 2 tbsp of oil in a pan over medium heat.
Add cumin seeds and let it sizzle.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies (if using). Stir-fry for a minute.
Add turmeric, coriander powder, cumin powder, chili powder, and garam masala. Stir well to toast the spices.
Add boiled potatoes (mashed), peas, and salt. Mix everything together.
Cook for a few minutes until the peas are tender and everything is well combined.
Remove from heat and let the filling cool a little.
Add chopped cilantro, lemon juice, and amchur powder. Mix well and set aside. - Prepare the Pastry Dough:
In a large bowl, mix together all-purpose flour, salt, and oil or ghee. Mix till the mixture resembles breadcrumbs.
Gradually add water, little by little, and form a firm dough. Knead the dough for 5-7 minutes until smooth and elastic.
Cover the dough with a damp cloth and rest it for 20-30 minutes. - Shape the Samosas:
Divide the dough into small balls (as many as you want to make).
Roll each dough ball into a smooth ball and then roll it into an oval or round shape (about 5-6 inches in diameter).
Cut the circle into half to make two semi-circles.
Fold each semi-circle to make a cone, sealing the edge with little water.
Stuff the cone with the prepared spiced potato mixture and press down gently.
Fold the open edge of the cone to seal the samosa completely, so no filling is out. - Fry the Samosas:
Heat oil in a deep frying pan over medium heat.
Once the oil is hot, about 350°F or 175°C, gently drop the samosas into the oil in batches.
Fry them until they are golden-brown and crispy on all sides, about 5-7 minutes.
Remove the samosas from the oil and place them on a paper towel to drain excess oil. - Serve:
Serve the samosas hot with mint chutney, tamarind chutney, or yogurt dip. - Tips:
You can make the filling ahead of time and refrigerate it.
For a healthy version, the samosas may be baked in the oven. If you need to make more than one tray, you may freeze them prior to frying; just shape, freeze, then fry.
