1 cup urad dal (black gram)
1-2 green chilies, finely chopped
1-inch piece of ginger, finely chopped
1 teaspoon whole black peppercorns
A few curry leaves, finely chopped
Salt to taste
Water, as needed
Oil, for deep frying

Directions
- Soak the urad dal: Rinse the urad dal thoroughly and soak it in water for 4-5 hours or overnight.
- Grind the batter: Drain the soaked dal and grind it into a smooth, thick batter. Add water sparingly, just enough to make a thick batter.
- Add spices: Mix the chopped green chilies, ginger, black peppercorns, curry leaves, and salt into the batter
- Shape the vadas: Wet your hands and take a small portion of the batter. Shape it into a doughnut-like round with a hole in the center.
- Deep fry: Heat oil in a deep frying pan. Carefully drop the shaped vadas into the hot oil and fry until golden brown and crispy.
- Serve: Drain the fried vadas on paper towels to remove excess oil. Serve hot with coconut chutney and sambar.
