Ingredients for Lemon Rice Recipe

Now let’s gather all the ingredients of lemon rice. First of all we need two cups cooked rice, 2 tablespoon lemon juice, 2 tablespoon oil or ghee, one tablespoon mustard seeds, 1 tablespoon chana dal, 1 tablespoon urad dal, 1/4 cup peanuts and cashews, 2 dry red chillies, 2 green chillies, 1 sprig curry leaves, 1/4 tablespoon asafoetida, 1/2 tablespoon turmeric powder, and a pinch of salt or to taste, and last but not least fresh coriander leaves for garnish. Prepare the Rice

First we need cooked, non-sticky rice, you can also cook fresh rice. Once it’s done, spread it on a plate or tray to cool down completely. This prevents the rice form becoming mushy when we mix it with the tempering. So let’s move to next step.

Make the Tadka (Tempering)

It’s time to making magical Tadka (Tempering). So firstly we need a pan, oil or ghee, etc. heat the oil in pan over medium heat, now add the peanuts and cashews then fry them until they turn into golden and crunchy. Then in the same oil add the mustard seeds and let them splutter. After a few time later add the chana dal and urad dal. Then fry them until golden brown. Now add both red and green chillies and curry leaves. Then add asafoetida and turmeric and give it a quick stir. After it’s done take a side pan, and jump to next move.

Combine the Tempering with Rice

Finally we reach our final destination, I mean now it’s time to combine the all. So first of all turn off the heat, then add previously cooked rice in this pan which have tempering. After that add lemon juice and salt to taste, after that add the fired peanuts and cashews bank into pan. After that mix everything together with a spoon or your hand. but be gentle to avoid breaking the rice grains. And there we have a delicious lemon rice bowl.

Ingredients

  • 2 cups cooked rice

  • 2-3 tbsp lemon juice

  • 2 tbsp oil or ghee (sesame oil is traditional and adds a great flavor)

  • 1 tsp mustard seeds (rai)

  • 1 tbsp chana dal (split chickpeas)

  • 1 tsp urad dal (split and skinned black gram)

  • 1/4 cup peanuts or cashews

  • 2-3 dry red chilies

  • 1-2 green chilies

  • 1 sprig curry leaves

  • 1/4 tsp asafoetida

  • 1/2 tsp turmeric powder

  • Salt to taste

  • Fresh coriander leaves (cilantro), for garnish (optional)

Directions

  • Prepare the Rice: The key to good lemon rice is using cooled, non-sticky rice. If you are cooking fresh rice, make sure it's cooked so that each grain is separate. Once cooked, spread it on a plate or tray to cool down completely. This prevents the rice from becoming mushy when you mix it with the tempering.
  • Make the Tempering (Tadka): Heat the oil or ghee in a pan over medium heat. Add the peanuts or cashews and fry them until they turn golden and crunchy. Then in the same oil, add the mustard seeds and let them splutter. After that add the chana dal and urad dal. Fry until they turn a light golden brown. Now add the dry red chilies, green chilies, and curry leaves. Then reduce the heat to low. And add the asafoetida (hing) and turmeric powder. Give it a quick stir. Be careful not to burn the spices.
  • Combine the Tempering with Rice: Turn off the heat, and add the cooled rice to the pan with the tempering. Then add the lemon juice and salt to taste, after that add the fried peanuts or cashews back into the pan. Now gently mix everything together with a spoon or your hand (if the rice is cool enough) until the rice is evenly coated with the tempering and the turmeric gives it a beautiful yellow color. Be gentle to avoid breaking the rice grains.
  • Serve: Garnish with freshly chopped coriander leaves. Lemon rice is best served warm and can be enjoyed as is or with a side of pickle, papad, or coconut chutney.
