So they told me that today we will have lunch prepared by you. Then I thought what should be made so that they keeps licking their fingers. I opened the fridge and saw some eggs lying in it. Then something came to my mind so I decided to make egg curry for them and they liked it very much. So, Now I will help you to make tasty and easy egg curry recipe at home.

About Egg Curry

Egg curry dish is a rich spicy gravy which is combined with hard boiled eggs. This dish, which is popular in Indian cooking, goes well with roti, naan, or rice. However, there are different ways to make this dish. This is a flavorful and filling dish, is enjoyed worldwide, especially in India and South Asia. These easy, step-by-step recipe will help you make a tasty egg curry at home:

Recipe for Making Dish

Preaparation of Eggs

First hard-boil the eggs and peel them. Then carefully make a few cut on each egg. This will allow the egg to absorb the flavours of the curry. Now Heat oil in a pan over medium heat. Then add cumin seeds, add mustard seeds if using, and allow to splutter.

Now add chopped onions, and fry till golden brown. Then add ginger, garlic, and green chili. Sauté for 1 minute more until fragrant.

Preparation of the curry base

Add chopped tomatoes or tomato puree. Then cook until the oil separates and tomatoes become soft. Afterthat, add turmeric powder, coriander powder, and red chili powder. Then Mix well and cook for a minute. Now add a little water if the spices start to stick.

Add salt to taste and one cup of water, alternatively use coconut milk for more better taste. Now bring it to a simmer and gently add the hard-boiled eggs into the warm curry. Then cover the pan and simmer for 5 to 7 minutes so that the eggs themselves can absorb the flavours.

Sprinkle garam masala and fresh coriander leaves over the top of the curry.Serve warm with rice, roti, naan, or bread and Enjoy 🙂

Ingredients

  • 4-6 eggs (boiled and peeled)

  • 2 tspn oil

  • 1 tspn cumin seeds

  • 1 onion (finely chopped)

  • 2 tomatoes (pureed or finely chopped)

  • 1 tspn ginger-garlic paste

  • 1/2 tspn turmeric powder

  • 1 tspn red chili powder

  • 1 tspn coriander powder

  • 1/2 tspn garam masala

  • 1/2 tspn salt (or to taste)

  • half cup of water

Directions

  • Preparation of eggs
    Hard-boil the eggs and peel them.
    Carefully cut a few shallow slits on each egg.
  • The tempering of spices
    Add oil in a pan at medium heat
    Add cumin seeds and mustard seeds and allow to splutter.
    Add chopped onions, and fry till golden brown.
    Add ginger, garlic, and green chili. Sauté for 1 minute more until fragrant.
  • The preparation of the curry base
    Add chopped tomatoes or tomato puree.
    Cook until the oil separates and tomatoes become soft
    Add turmeric powder, coriander powder, and red chili powder.
    Mix well and cook for a minute.
  • Simmer
    Add salt to taste and one cup of water(you can use coconut milk also)
