Now let’s gathering all the ingredients, so firstly we need unripe raw mangoes, tart varieties for best flavor, one to one and half cup sugar, you can also use jaggery. 1/4 to 1/2 cup fresh mint leaves. 1 to 2 teaspoon roasted cumin powder, 1/2 teaspoon black pepper powder, 1/2 teaspoon cardamom powder, 1 inch piece ginger, and last but not least water. Prepare the Mangoes

Now we need our star ingredient the raw mangoes! I have here three medium sized, beautiful sour mangoes, Make sure they are firm and green. Now we’ll give them a good wash to remove any dirt. Then take a pressure cooker, place the washed mangoes in the cooker and add just enough water to cover them, about one and a half to two cups. This will help them cook evenly. then we’ll let these cook for about 3 to 4 whistles on medium heat, or until they are nice and soft. After doing that let’s move to next step.

Extract the Pulp

So alright, our mangoes are beautifully cooked! Now see how the skin has started to separate, now we need to let them cool down completely before we handle them. Once they’re cool enough to touch, we’ll peel off the skin. It should come off very easily now. And now for the best part, extracting the pulp! just scoop out all the lovely, tangy pulp, leaving behind the seed. Let’s jump to next step.

Making the Aam Panna Concentrate

Now let’s add the magic ingredients that will give our Aam Panna its signature flavor. we’ll start with some sweetness. Now add about one cup of sugar. You can adjust this to your liking depending on how sour your mangoes. Next now add some fresh mint leaves to the blender, then add some cumin powder it’s good for digestive. then add one teaspoon of black salt, and now add some optional ingredients, cardamom powder about half teaspoon, these are optional but highly recommended. Now, let’s blend everything until we get a smooth, lump free puree. let’s move to next step.

Aam Panna (also known as Kairi Panha in some regions) is a refreshing and tangy Indian summer drink made from raw, unripe green mangoes. It's known for its cooling properties and is a popular way to beat the heat.

Ingredients

  • 2-3 medium-sized green, unripe mangoes (about 500-600g). Choose tart varieties for the best flavor.

  • 1 to 1.5 cups sugar, or you can also use jaggery.

  • 1/2 cup fresh mint leaves.

  • 1 teaspoon of cumin powder.

  • 1 teaspoon black salt.

  • 1/2 teaspoon black pepper powder

  • 1/2 teaspoon cardamom

  • 1-inch ginger piece

  • water

Directions

  • Prepare the Mangoes: Wash the mangoes, then place the mangoes in a pressure cooker with water about 1.5 to 2 cups
  • Extract the Pulp: Once the mangoes are cooked peel the skin and discard it.
  • Make the Concentrate: In blender, combine the mango pulp, sugar, mint leaves, cumin powder, black salt, black pepper, cardamom and ginger and make smooth and lump-free puree. If it's too thick, add a tablespoon or two of the water used for boiling the mangoes.
  • Store the Concentrate: Transfer the Aam Panna to a clean, airtight glass jar
