4 cups chopped Romaine lettuce
1 large cucumber, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 cup crumbled feta cheese
1/2 cup Kalamata olives
1/2 red onion, thinly sliced
1 pint cherry tomatoes, halved
For the dressing of salad:
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
1 clove garlic, minced
Salt and pepper to taste
Directions
- Toss all the salad ingredients in a large bowl. And in a separate bowl, whisk together the a dressing ingredients until well combined. Pour the dressing over the salad just before the serving and toss gently to coat.
- You can add some other veggies or fruits to make more nutrients and healthy.
