Ingredients

  • 2 large potatoes, boiled and mashed

  • 1 cup whole wheat flour (atta)

  • 1 small onion, finely chopped

  • 1-2 green chilies, finely chopped (adjust to taste)

  • 2 tbsp fresh coriander leaves, chopped

  • 1 tsp ginger paste

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1/2 tsp garam masala

  • 1/2 tsp red chili powder (adjust to taste)

  • Salt to taste

  • Ghee or oil for cooking

  • Water as needed

Directions

  • Prepare the dough:
    In a mixing bowl, combine the whole wheat flour and a pinch of salt. Gradually add water and knead to form a soft dough. Also cover the dough and let it rest for 15-20 minutes.
  • Prepare the filling:
    In a pan, heat a little oil and add cumin seeds. Once they splutter, add the chopped onions and green chilies. Sauté until the onions are translucent.
    Add the ginger paste and sauté for another minute.
    Add the mashed potatoes, coriander powder, garam masala, red chili powder, and salt. Mix well and cook for 2-3 minutes.
    Remove from heat and add the chopped coriander leaves. Mix well and let the filling cool.
  • Make the parathas:
    Divide the dough into 4 equal portions. Roll each portion into a ball.
    Take one ball of dough and roll it out into a small circle.
    Place a spoonful of the potato filling in the center of the circle. Bring the edges of the dough together to seal the filling inside.
    Gently roll out the stuffed dough ball into a flat, round paratha. Be careful not to let the filling spill out.
  • Cook the parathas:
    Heat a tawa or griddle over medium heat. Place the rolled-out paratha on the hot tawa.
    Cook for 1-2 minutes until small bubbles appear on the surface. Flip the paratha and apply ghee or oil on the cooked side.
    Flip again and apply ghee or oil on the other side. Cook until both sides are golden brown and crisp.
  • Serve:
    Serve the aloo parathas hot with yogurt, pickle, or any chutney of your choice.
