Egg Roll History

The history of egg rolls is quite interesting and a bit debated! Here’s a brief overview:

Origins

It is believed that the egg rolls were first discovered in the United States, particularly in New York City during the 1930s. However, there are numerous claims of who invented the egg roll, with two chefs-Lung Fong of Lung Fong’s and Henry Low of Port Arthur-saying they discovered it.

Name and Ingredients

Despite the name, egg rolls usually do not contain eggs in the filling. The name probably came from a recipe in the 1917 cookbook “The Chinese Cook Book” by Shiu Wong Chan, which used a layer of fried egg to wrap the filling1. The other theory states that the Chinese word for egg (蛋, dàn) sounded similar to the word for spring (春, chūn), thus causing some confusion with spring rolls.

Evolution

The modern American egg roll is a cylindrical, savory roll made using a thick wheat flour skin, with shredded cabbage and chopped meat fillings. Among others, and fried until crispy. It is a staple in American Chinese cuisine. It often serves as an appetizer and is accompanied by dipping sauces that may include duck sauce, soy sauce, or hot mustard.
