Ingredients

  • 1 Tablespoon oil

  • 1 pound boneless, skinless chicken breasts, cut bite-sized

  • 1 onion, chopped

  • 1½ teaspoons of garlic powder or 6 cloves garlic, minced

  • 3 cups cooked white beans (or two 15-ounce cans, drained
    and rinsed)

  • 2 cups chicken or vegetable broth

  • 1 cup (two 4-ounce cans) chopped mild green chiles

  • 1 teaspoon ground cumin

  • 1 teaspoon dried oregano

  • ½ teaspoon pepper

  • ¼ teaspoon cayenne pepper or chili powder, if desired

  • 1 cup (8 ounces) sour cream or plain yogurt

  • ½ cup nonfat or 1% milk

Directions

  • Heat oil in a large saucepan; sauté the chicken, onion and
    garlic until the chicken is no longer pink.
  • Add the beans, broth, green chiles and seasonings
  • Bring to a boil. Reduce the heat and simmer uncovered
    for 30 minutes.
  • Remove from the heat; stir in sour cream or yogurt and
    milk.
