1/4 cup brown sugar (or to your liking for sweetness)
1 large egg
1/4 cup plain, unsweetened yogurt
1/4 cup milk (or non-dairy milk)
1/4 cup vegetable oil or melted butter
1/2 tsp vanilla extract
1/2 cup fresh or frozen blueberries (tossed gently in flour so they don’t sink)

- Preheat the oven to 180°C (350°F) and line your muffin tin with 4–5 paper liners.
- In a mixing bowl, combine dry ingredients: whole wheat flour, baking powder, baking soda, salt, and brown sugar.
- In another bowl, whisk wet ingredients: egg, yogurt, milk, vegetable oil, and vanilla extract.
- Gently mix the wet ingredients into the dry ingredients until just combined. Be careful not to overmix—this keeps the muffins tender.
- Fold in the blueberries, ensuring they are evenly distributed.
- Spoon the batter into the prepared muffin liners, filling each about 3/4 full.
