I still remember when we used to go on camping trips during college days. So we have had barbecue many times while camping in the mountains. Chicken Malai Tikka was our first choice to make. During camping, we had a senior whom we often called captain. He was the one who made the best and delicious malai tikka. I said to him, Sir, please teach me too, you make it so well, then he taught me, after that I made it myself many times during camping and everyone liked this dish.
About Chicken Malai Tikka
A favorite Indian starter, Chicken Malai Tikka (“cream chicken pieces”), consists of boneless chicken pieces marinated in a creamy mixture of yogurt, cream, cheese, and fragrant spices. The term ‘Malai’ describes the rich, soft texture of the meal, which is enhance by the flavorful spices. There are also different ways of preparing it like you can grill it, bake it, and pan-fry it to make the chicken juicy and flavorful delight.. Now let’s prepare our recipe!
Recipe
Marination of Chicken
In a large mixing bowl Add yogurt, heavy cream, ginger-garlic paste, green chili paste, cardamom powder, white pepper powder, mace powder, lemon juice, and salt Then blend the ingredients well. Now add the chicken pieces into the marinade and ensure they are coated well. Now cover the bowl and keep aside for 30 minutes.


Cooking Chicken
Let’s start with first adding butter or ghee in a hot pan on medium heat. Let it melt. Then transfer marinated chicken pieces into the pan. Then let it cook on a medium heat and cover the pan. Now after every two minutes remove cover and also turn frequently for cooking all pieces of chicken. Cook it until brown in colour.



Finishing Touch
Now Transfer the Chicken Malai Tikka to a serving plate with adding extra cream and corriander leaves in it Serve hot with mint chutney or your preferred dipping sauce.

500g boneless chicken (thigh or breast pieces)
half cup thick yogurt
1/4 cup fresh cream
1 tspn ginger-garlic paste
2 green chilies (finely chopped)
1 tspn lemon juice
half tspn black pepper powder
half tspn garam masala
half tspn cumin powder
half tspn coriander powder
half tspn turmeric powder
Salt to taste
1 tspn butter or ghee
Fresh coriander and mint leaves for garnish
Wooden skewers (soaked in water for 30 minutes)
Directions
- Marinade Preparation
Add yogurt, heavy cream, ginger-garlic paste, green chili paste, cardamom powder, white pepper powder, mace powder, lemon juice, and salt in a large mixing bowl.
Blend the ingredients well until a smooth marinade is formed.
Add the chicken pieces into the marinade and ensure they are coated well.
Cover the bowl and place it in the refrigerator for at least 30 minutes - Cooking the Chicken
Heat either butter or ghee in a pan.
Then place the marinated chicken pieces into the pan.
Cook on medium heat, turning frequently, until all pieces are cooked through and remain golden in color. - Finishing Touch
Transfer the Chicken Malai Tikka to a serving plate with the addition of fresh coriander. Serve hot with mint chutney or your preferred dipping sauce.
