Hello foodies…. 🙂 Welcome back once again. I hope you all are fantastic. Today i brought Egg fried rice for you . Today’s recipe is going to be very easy to make. This recipe is also very best for who don’t have enough time to prepare food. You can make this dish with leftover rice. This dish is also very close to me. Because when I first time went out of my city to work, which was Bengaluru. I shifted to Bengaluru because of my job and i lived alone there. My office timing was 9am and because I had to cook my own food, I had to finish all the work quickly.

So I used to make this dish for myself most of the time. Because this dish is easy to make so it helps me alot to do my all the work timely.

Egg Fried Rice is a quick, stir fry dish with cooked rice, scrambled eggs and spring onions. This dish is popular chinese food and best to eat in lunch if you want some quick food. I use leftover rice most of the time because it makes dish easy to make.

How to make Egg Fried Rice

Perparation of Eggs

First you need to add 1 spoon of vegetable oil in a heat pan over medium heat. Now in a bowl, beat 2 eggs, beat it until it mixed well. Then put beat eggs in a pan and scramble it well. After that transfer scrambled eggs into a bowl and kept it aside.

Saute Vegetables

Now use the same pan and add again 1 tablespoon of oil. Then add minced garlic in it and sauté it for until fragrant. Now add all the vegies carrots, cabbage and peas. Then stir-fry for 2-3 minutes until they become tender.

Add rice and Scrambled Eggs

Now add cooked rice in a pan(I have used leftover rice). Then Start breaking up the clump in rice and then stir everything together. Now add the soy sauce and sesame oil, and mix it well. Then transfer scrambled eggs from bowl to pan and mix it well. Then add green onions, salt and pepper according to taste and Stir it for another minute. Now turn the gas flame off.

Ingredients

  • 2 cups cooked rice (you can use leftover rice for better texture)

  • 2 large eggs

  • 2 tspn vegetable oil

  • half cup of spring onions (chopped)

  • 2 tspn soy sauce

  • 2 cloves garlic(minced)

  • Salt and pepper to taste

Directions

  • Preparation of Eggs
    Add 1 spoon of vegetable in at hot pan over medium heat.
    Beat the eggs in a bowl, pouring them into the pan when whisked.
    Scramble until done, then set aside.
  • Sauté Vegetables
    Using the same pan, add the other 1 tablespoon of oil.
    Add the minced garlic and sauté until fragrant.
    Toss in the mixed vegetables of your choice and stir-fry for 2-3 minutes until they become tender.
  • Add rice
    Add cooked rice into the pan.
    Start breaking up the clump and then stir everything together.
    Add the soy sauce and sesame oil, mixing to coat the rice well.
  • Add scrambled eggs
    Add the scrambled eggs back in, and mix well.
    Add green onions, salt and pepper to taste. Stir for another minute.
  • Serve
    Remove from the heat and serve immediately.
    You can garnish with extra green onions.
