Ingredients

  • 2 medium beet-roots, peeled and chopped

  • 2 carrots, peeled and chopped

  • 1 apple, cored and chopped

  • 1 small piece of ginger (about 1 inch), peeled

  • Juice of 1 lemon

  • 1 cup water

  • Ice cubes (optional)

Directions

  • Add the chopped beet-roots, carrots, apple, and ginger to a blender or juicer.
  • Pour in the water.
  • Blend or juice until smooth.
  • If using a blender, strain the mixture through a fine-mesh sieve or cheesecloth to remove the pulp, pressing down with a spoon to extract as much juice as possible.
  • Stir in the lemon juice.
  • Serve the beet-root juice over ice cubes if desired.
  • You can adjust the sweetness by adding a bit of honey or agave syrup if needed.
    For an extra nutritional boost, add a handful of spinach or kale to the mix.
