Hey foodies…. Welcome back and also Glad to see you again in our blog(tasty fry). I hope you’re all fine. Today i will give you recipe of ‘”chole bhature”. Chole are chikpeas curry and bhature are fluffy deep fried bread. This is very popular street food. Which is people consume in breakfast and lunch. Basically you will find this food in every indian restaurant, specially in punjab & delhi. Whenever I am not carrying my lunch, I eat chole bhature during my office lunch break, from my office near dhaba.

About Chole Bhature

A well-known North Indian dish of Chole (spicy chickpea curry) served with Bhature (soft and fluffy deep-fried bread) called chole bhature. This dish is served with onions and pickle or chutney. Chole bhature are favorite dish of almost every north Indian people.

How to make Chole Bhature

Step 1: Preparation of chole (chickpeas)

First we will start with soak 1 cup of chickpeas for 8-10 hours(You can soak it overnight). Now add add soaked chickpeas in a pressure cooker. Then add some water so it can cover chole. then add pinch of salt and cover pressure cooker with lid. Pressure cook it for 5-6 whistles. Now let it cool.

Step 2: Cooking Chole (chole curry)

Add oil in a heat pan, then add cumin seeds and let them crackle. Add chopped onion and sauté till golden brown. Now add ginger, garlic, and green chilies in it. Then Stir-fry for just a minute till they give off their aroma. Then add tomato puree and cook until they soften and the oil separates from it. Now add turmeric powder, coriander powder, red chili powder, and chole masala. Then Mix it well and sauté for a few minutes.

Now add boiled chickpeas and remain chickpeas water. Then mix it well and then add salt to taste. Now Bring it to a boil in low medium flame of gas and boil it until gravy thickens, about 15-20 minutes. After that, add amchur, garam masala, and mix well. Top with chopped coriander leaves.

Step 3: Preparation of Bhature Dough

Add all purpose flour, baking soda, sugar and salt in a big bowl and mix it well. Now add yogurt and mix. Then gradually add enough warm water to knead into a smooth, soft dough. Now cover the dough with a wet clean cloth and keep aside in a warm place. Then divide dough into equal portions and shape into small balls. Roll each ball of dough into a round or oval shape (do not make it too thin).

Add oil in a deep pan or kadhai until hot but not smoking. Now Slide a rolled bhatura gently into the hot oil. With a slotted spoon, press it lightly so that it puffs. Now let it Golden brown on both sides. Then Remove onto paper towels to drain oil.

Serve and Enjoy

Serve hot chole and bhature in a plate. Better to eat with onions and chutney you can add achaar also.

Ingredients

  • For Chole (Chickpea Curry)
    1 cup dried chickpeas
    1 large onion (finely chopped)
    2 tomatoes, (pureed)
    1-inch ginger, (grated)
    4-5 garlic cloves, (minced)
    2 green chilies, (sclied)
    1 tspn cumin seeds
    1 bay leaf
    1-inch cinnamon stick
    2 cloves
    1 tspn turmeric powder
    1 tspn red chili powder
    1 tspn coriander powder
    1 tspn garam masala
    1 tspn amchur (dry mango powder)
    1 tspn kasuri methi (dried fenugreek leaves)
    1 tspn oil or ghee
    Salt to taste
    Fresh coriander leaves for garnish

  • For Bhature (Fried Bread)
    2 cups all-purpose flour (maida)
    2 tspn semolina (suji)
    ½ cup yogurt
    1 tspn sugar
    1 tspn salt
    ½ tspn baking soda
    1 tspn oil
    Water, as needed
    Oil for deep frying

Directions

  • Preparation for choley (chickpea)
    Soak and Boil
    : Soak chickpeas overnight for 8-10 hours. Drain them. Wash them well, being careful to remove all the dirt and shit.
    Add soaked chipeas into a pressure cooker with some water (so as to completely cover the chickpeas), chickpeas, salt (a pinch). Pressure cook for 5-6 whistles or till tender.
  • Cooking Choley (chickpea curry)
    Heat oil in a Pan. Add cumin seeds and let them crackle. Add chopped onion and sauté till golden brown.
    Add in ginger, garlic, and green chilies. Stir-fry for just a minute till they give off their aroma.
    Add in chopped tomatoes and cook till they soften and the oil separates from it.
    Add turmeric powder, coriander powder, red chili powder, and chole masala. Mix well and sauté for a few minutes.
    Add boiled chickpeas with remains water. Mix well. Add salt to taste. Bring to a boil and reduce heat to simmer until gravy thickens, about 15-20 minutes.
    Finishing Touch and Garnish: Add amchur, garam masala, and mix well. Top with chopped coriander leaves.
  • Preparing Bhature Dough
    In a big bowl, mix together all-purpose flour, baking soda, sugar, and salt. Mix thoroughly.
    Add yogurt and mix. Gradually add enough warm water to knead into a smooth, soft dough.
    Cover the dough and keep aside in a warm place, wrapped in a wet cloth for a minimum period of 2 hours.
    Shape the Bhature: Divide into equal portions and shape into small balls. Roll each ball of dough into a round or oval shape (do not make it too thin).
  • Fry the Bhature
    Heat oil in a deep pan or kadhai until hot but not smoking. Slide a rolled bhatura gently into the hot oil. With a slotted spoon, press it lightly so that it puffs.
    Golden brown on both sides. Remove onto paper towels to drain.
  • Serve
    Serve hot chole bhature and enjoy with some onions or chutney and achaar.
